Caitlyn’s Catch-Ups: Tacos and Gluten-free Baking
Caitlyn’s Catch-Ups Part 4! Last Saturday night, my sorority family came over to my dorm and we had a fun night of taco-making, movie-watching, and gluten-free baking!
In my sorority, every new member gets a big sister, and then that new member gets a little sister the next year, and so on, which is how we form our families. My family consists of myself, my big–Karissa, and my little–Megan. Megan is gluten-free, so we always have to make sure where we go to eat has options for her too. On Saturday, instead of going out to dinner like we usually do, we decided to take a break from finals and make dinner ourselves just like real people! We started the evening off with a trip to nearby Harris Teeter, where we bought taco supplies (corn tortillas for Megan!) and, on a whim, supplies to make a gluten-free pizookie for dessert!
Once back in the kitchen of my Morgan apartment, Megan and I got right to cooking, while Karissa ‘supervised.’ We turned on the TV and Despicable Me just happened to be on, so of course we watched that! After stuffing ourselves with delicious homemade tacos and salsa, we moved on to dessert! Gluten-free baking kind of intimidates me, but we made it simple through the use of gluten-free cookie mix! (And it’s actually super delicious. I was surprised by how tasty it was!)
After demolishing the cookie and ice cream, cleaning up our mess, and watching the movie, we all reluctantly headed back to our respective study caves after what was a delicious and entertaining evening spent avoiding our finals. Sometimes, it just has to be done.
